Bannocks figured into the Celtic celebration of Beltane. Charms could be added when bannocks were prepared in cake form; each charm symbolizing the recipient's good luck for the following year.
You need: 2 Cups hot milk 1/2 teasgirl thingy baking soda 1 1/2 cups intant oatmeal 1 tablesgirl thingy grated orange peel 1 egg 1 tablesgirl thingy chopped almonds
In large bowl, pour the milk over the oatmeal; let sit for 10 minutes. Beat in the egg, baking soda, orange peel, and almonds. Consistancy should be like fairly thick pancake batter. If it's too thin, add oatmeal. Too thick, add a little milk. Heat griddle over a moderate flame; grease. Pour the batter onto the griddle and cook until bubbles form. Flip and cook other side. Best served with butter and honey.
Yield - about 12 (2 inch) bannocks.
