These were sometimes called simnel, cakes similar to these were made by children for their mothers in England during mid-Lent. The favored frosting was butter cream. Almost all the ingredients are lunar in nature which makes them perfect for use as ritual cakes.
You Need:
3/4 cup butter 1/3 cup shredded coconut 1 1/2 cups sugar 1/2 cup candied lemon rind, minced 4 eggs 2 cups flour 1 tsp salt 1 cup currents 2 1/2 cups marzipan 2 tblspn white wine
Preheat oven to 350 degrees. Generously grease an 8 inch springform pan. Cream butter and sugar; bet in the eggs one at a time. Gradually mix in the flour and salt. Beat on high speed for 2 minutes; scrape bowl frequently. fold in the currants, coconut and lemon rind. Pour half the batter into the pan. Mix the marzipan and wine until smooth, then spread over the cake batter. Pour in the remaining batter. Bake until the cake springs back when touched, about 60 minutes.
Yield - approx 12 servings

Variation; Replace one of the eggs with 1/4 cup plain yogurt for even stronger Goddess energies and a very moist cake. Adding 1 teasgirl thingy rosewater and this can be used easily for a ritual mooncake.
